Gluten Free/ GUILT FREE Crispy Chicken

        Ingredients: 1.5 lbs or 3 very large chicken breasts, boneless & skinless 1 1/4 cup almond meal 1 tbsp salt-free onion powder 1 tsp dried oregano 3/4 tsp sea salt 1/8 tsp ground black pepper 2 large eggs Cooking spray  Directions: Preheat oven to 450 F degrees. Line baking sheet with parchment paper, spray paper well with cooking spray and set aside. In one small bowl, mix all dry ingredients (almond meal, onion powder, oregano, salt and pepper).  In another small bowl, whisk both eggs. Cut chicken breasts into 1/2 inch thick strips.  Next, pound strips with a meat tenderizer.  Dip each strip into the whisked eggs then dip into dry mix bowl. Make sure you completely coat all areas of stip in dry mixture. Place on baking sheet. Tip: Try to hold meat by the ends to prevent almonds sticking to your fingers, or rinse your fingers after each piece in a bowl with cold water.  Bake for 15 minutes on one ...

Happy Sunday! This is my ABSOLUTE favorite time of the year.. there's just something about the fall festivities. I guess it gives me such comfort, happiness.. and maybe nostalgia? I did grow up in the New England area after all! Anyways.. I want to put myself out there again and get back on track with blogging inspo.. so please stay tuned as I have some amazing things in store... hopefully that will have you rushing to the store to want to be in on the fun!
